Parsnips for Dinner!

Some vegetables really don't require much for storing. Parsnips for example can be left in the ground all winter and be harvested in the spring. You may have to cut out a few spots.


You can even bury the little guys in the ground with enough mulch so the ground doesn't freeze. That way, you can have sweet parsnips all winter long.

Seed harvesting is a little bit trickier. You have to leave the parsnips in the ground. You will get seeds on the second year. This is my favorite root vegetable! Check out our blog for recipes!
